CHEESY SKILLET CORN DIP

It’s cheesy, it’s corny, it’s dipping delicious. This dish will be the star of your backyard party! This recipe was created by and featured on the Gluten Free & More Magazine blog. 

Ingredients

1 tbsp olive oil
2 cups frozen corn kernels, thawed 
1 red onion, diced 
1 jar House Party (we love the jalapeño cheddar flavor for this)
1 10oz can diced tomatoes and green chiles, drained   
 1/2 cup mayo (we love Follow Your Heart)  
Smoked paprika 
Cilantro 
Dipper of choice (we love scoops chips or Frito's for this) 

Instructions

  1. Heat a large skillet over medium-high heat. Add the onion and corn and cook until the onion is translucent, and the corn begins to char. Add the House Party Cheesy Dip, canned tomatoes, chilies, and mayonnaise. Reduce heat and cook, stirring occasionally until hot, about 5 minutes.

  2. Serve sprinkled with paprika and cilantro with corn chips to dip
