Cheesy Zucchini Gratin

Pass the sides! This cheesy gratin will quickly become a family favorite this holiday season. This recipe was created by and featured on the Gluten Free & More Magazine blog. 

Ingredients

 3 zucchini, sliced 1/4 in thick 
 Fine sea salt 
 1 jar House Party Cheesy Dip, Mild is preferred 
 1/2 C vegetable broth
 1 C seasoned breadcrumbs 
Instructions
  1. Preheat oven to 400°F. Spray an 8 by 8-inch (or similar) baking dish with cooking spray.

  2. Place sliced zucchini in a colander, sprinkle with salt, toss, and let sit for 10 minutes. Dry the zucchini and arrange in the prepared baking dish.

  3. Blend the House Party Cheesy Dip with vegetable broth until smooth. Pour over the zucchini. Top with breadcrumbs and bake for 35–40 minutes. Let sit for 5 minutes before serving.
